I am replacing the front wheel bearings in my '75 CJ5 (Dana 30). How much grease should I use to pack the bearings? Is just packing grease in the bearing carrier itself enough or should I fill up the entire hub? Also what about the hub locking mechanism; should I pack it as well or just a light coating? Any advice is appreciated.

Pack the bearings well with grease. No need to pack th hub. Don't grease the locking hubs. Maybe a little oil or Tri Flow if they turn hard.

One thing forgotten when servicing the front bearings are the spindle bearings.
At one time there was an item on the market called "Adapt-to-lube"
Screws on the axle, sends grease into the spindle bearing area, works good.
I have been using one for over 20 years.
Don't know whether or not they are still available.

I always put a half inch or so of grease in the hub between the bearings. It seems to help keep the grease in the bearings a little better. I also take the main locking hub body (not the dial) apart, clean it good, and lube lightly with bearing grease or extreme pressure lube (moly).

If you go so far as to pull the spindle to do the spindle bearing, I just wipe the bearing down as best I can and press bearing grease back into the rollers. It's very tough to remove the bearing without wrecking it so options are slim. I hate having the inside of the spindle full of grease, it just makes it that much messier to do the job and doesn't help anything. Just put a very light coat of grease on the axle stub to keep it from rusting.
