258 Manifold Gaskets

    I'm sorry to have to be asking such a dumb question, but I can't seem to find the answer in either my Chiltons or Haynes manuals.
    The NOS gasket set that I have for my '78 258 engine has one long composite manifold gasket which is the full length of the head.
    There are also two separate gaskets which match up to the inlet manifold only.
    So which do I use ?
    Fitting two gaskets on the same joint seems like quite a dumb idea to me, but I appreciate there may be an issue with heat conduction to the inlet manifold.
    One final thing.
    The long composite gasket looks like it will fit either way round.
    Which side faces the head please ?

    No exhaust manifold gasket from the factory, metal to metal.
    Seems all the aftermarket folks give you that one piece double gasket.
